You hit on a great visual detail about our menu. When you compare the two styles, our premium Boneless Fillets are naturally shaped into smaller, precise pieces. Our master cutters have to hand-trim the fish this way to completely slice out the complex, floating Y-bones that Buffalo fish are known for. It takes extra care and smaller cuts, but it ensures a 100% bone-free bite! On the flip side, our Bone-In Ribs retain their large, traditional, hearty structure.
